Texture fondante, go\u00fbt intense.<\/p>\n<p><strong>Tacos de barbacoa<\/strong> : agneau ou boeuf cuit \u00e0 l&rsquo;\u00e9touff\u00e9e sous terre, tradition du dimanche matin. La file d&rsquo;attente est le meilleur indicateur de qualit\u00e9.<\/p>\n<p><strong>Tacos de canasta<\/strong> : \u00ab\u00a0tacos du panier\u00a0\u00bb, pr\u00e9par\u00e9s \u00e0 l&rsquo;avance et gard\u00e9s chauds dans un panier envelopp\u00e9 de tissu. Souvent en rago\u00fbt avec des l\u00e9gumes.<\/p>\n<p>Oaxaca est appel\u00e9e \u00ab\u00a0la terre des sept moles\u00a0\u00bb \u2014 negro, rojo, coloradito, amarillo, verde, chichilo et manchamanteles. Un seul voyage ne suffit pas pour tous les go\u00fbter.<\/p>\n<h2>Le mezcal : l&rsquo;esprit d&rsquo;Oaxaca<\/h2>\n<p>Le mezcal est au Mexique ce que le vin naturel est \u00e0 la France \u2014 un mouvement artisanal, terroiriste, qui explose depuis dix ans. Contrairement \u00e0 la tequila (qui n&rsquo;utilise que l&rsquo;agave bleu de Jalisco), le mezcal peut \u00eatre fait avec plus de 30 vari\u00e9t\u00e9s d&rsquo;agave, chacune donnant un profil diff\u00e9rent.<\/p>\n<p><strong>Espad\u00edn<\/strong> : la vari\u00e9t\u00e9 la plus courante, fruit\u00e9e et accessible. L&rsquo;entr\u00e9e en mati\u00e8re.<\/p>\n<p><strong>Tobal\u00e1<\/strong> : agave sauvage de montagne, rare, aux ar\u00f4mes floraux complexes. La bouteille peut co\u00fbter 50-100 EUR \u00e0 Oaxaca.<\/p>\n<p><strong>Pechuga<\/strong> : le mezcal de f\u00eate \u2014 distill\u00e9 avec une poitrine de poulet ou de dinde suspendue dans l&rsquo;alambic. Surprenant et c\u00e9r\u00e9moniaux.<\/p>\n<p>Visiter un <strong>Palenque<\/strong> (distillerie artisanale) \u00e0 Santiago Matatl\u00e1n ou dans les villages autour de Oaxaca est une exp\u00e9rience incontournable. On voit l&rsquo;agave cuit dans un four enterr\u00e9, broy\u00e9 \u00e0 la meule de pierre, ferment\u00e9 \u00e0 l&rsquo;air libre, distill\u00e9 en cuivre ou en argile.<\/p>\n<h2>La cuisine de rue : un patrimoine vivant<\/h2>\n<p><strong>Tlayudas<\/strong> (Oaxaca) : grande tortilla croquante garnie de haricots, fromage oaxaque\u00f1o, viande, chapulines (sauterelles grill\u00e9es). La pizza mexicaine.<\/p>\n<p><strong>Elotes et esquites<\/strong> : ma\u00efs en \u00e9pi (elote) ou en grain (esquite), garni de mayo, fromage cotija, chili et citron vert. Partout, toujours.<\/p>\n<p><strong>Tamales<\/strong> : p\u00e2te de ma\u00efs farcie (poulet, porc, mole, rajas), envelopp\u00e9e dans des feuilles de ma\u00efs ou de bananier.
