1. Hierve el Agua: the petrified waterfalls of Oaxaca

Hierve el Agua is a unique geological site — mineral springs that created white petrified waterfalls on a mountain cliff, at 1,800 m altitude. The calcium-rich water formed stone stalactites that mimic frozen waterfalls. You bathe in natural pools overlooking the Oaxaca valley. 1h30 from the city, reachable by colectivo. 2. The Cacahuamilpa caves: the underground cathedral

The Grutas de Cacahuamilpa in the state of Guerrero are among the largest caves in the world — chambers 80 m high by 40 m wide, with spectacular limestone formations. 3. The Huasteca Potosina: the little-known aquatic paradise

The Huasteca Potosina (state of San Luis Potosí) is Mexico's best-kept secret. Turquoise waterfalls (Cascada de Tamul, 105 m high, accessible only by kayak), crystal-clear rivers, jungle sinkholes (Sótano de las Golondrinas, 376 m deep). The village of Xilitla is home to Edward James’s surrealist garden — a labyrinth of concrete structures overrun by tropical jungle, inspired by Dalí and Escher. 6h from Mexico City, almost no foreign tourists.

4. Underground Oaxaca: the artisanal mezcal mills

Oaxaca’s artisanal mezcal is the antithesis of industrial tequila. In the villages of Santiago Matatlán (self-proclaimed "world capital of mezcal") and San Baltazar Guelavila, families have been producing mezcal for generations in palenques — open-air artisanal distilleries. You see the complete process: agave cooked in a buried oven, crushed by a stone wheel, fermented in wooden vats, distilled in copper or clay stills. 5. Bacalar: the lagoon of seven colors

Bacalar lies in the south of Quintana Roo, far from Cancún — a 55 km-long lagoon of turquoise, blue, indigo and emerald waters depending on depth and time of day. No waves, no salt, perfect temperature. You explore it by sailboat, kayak or paddle. The stromatolites of Bacalar (living rock formations 3.5 billion years old) are among the most accessible in the world. Eco-lodgings along the lagoon, a slow, contemplative vibe.

6. San Cristóbal de las Casas: the Tzotzil villages

Around San Cristobal, the Tzotzil and Tzeltal villages maintain pre-Hispanic traditions fused with Catholicism.
