Its inhabitants are called "guanacos" (affectionate term originating in the 19th century), sometimes "little fleas." The cuisine revolves around pupusa — galette made of masa dough stuffed with cheese, beans, loroco, or chicharron, a national dish eaten morning and night, celebrated every second Sunday in November. In Olocuilta, pupusas shops line the road by the dozens. To drink: Salvadoran horchata made with morro seeds, Macuá cocktail at Flor de Caña, and increasingly more café baby SHB high-altitude grilled on-site in the Apaneca-Ilamatepec mountain range.

Good to know: In El Salvador, the invierno (green season) means tropical showers in the afternoon, never full gray days. Bright mornings, landscapes greener than in the dry season.
