Granada — the oldest colonial city in continental America, founded in 1524 by Francisco Hernández de Córdoba on the shores of Lago Cocibolca (Lake Nicaragua, 8,264 km², the largest in Central America). Ochre cobblestones, pastel façades, an imperial yellow cathedral, the shadow of Mombacho 10 km away — the city embodies everything the "pueblos coloniales" of the Nicaraguan Pacific offer the eye and the soul.
More authentic than Cartagena, more accessible than Antigua Guatemala: Granada is lived on foot. The pedestrian Calle La Calzada runs from the cathedral to the lake, its café terraces open until 10pm. The Convento San Francisco (1529) houses pre-Columbian statues from the isletas. Offshore, Las Isletas — 365 islets created by a Mombacho eruption 20,000 years ago — are visited by lancha at sunset. And then that perfume: Flor de Caña, vigorón on a banana leaf, Matagalpa coffee, and the poetry of Rubén Darío that floats everywhere in Nicaragua.

The The ochre-yellow neo-classical cathedral has dominated the Parque Central since 1583 (rebuilt after William Walker's lootings in 1856). Climb the bell tower ($1) for a panoramic view over the colonial rooftops, Mombacho and the lake. Around it: Casa de los Tres Mundos (cultural center), the Parque's arcades, vigorón vendors serving on banana leaves. The city's beating heart for 500 years.

Off Granada, 365 islets created 20,000 years ago by a Mombacho eruption that hurled its flanks into the lake. Lancha tour (1h30-2h, $25-40/pers): artists' houses, fishing birds, capuchin monkeys on "Isla de los Monos", Castillo San Pablo (17th century). Sunset with a cocktail = the signature experience. Kayaking possible. Pier at Puerto Asese.
10 km from Granada, the Volcán Mombacho (1,344 m) shelters a cloud forest rare on the Nicaraguan Pacific, with endemic orchids, sloths, mono congo (howler monkey), 174 bird species. El Cráter trail (1.5 km, 2h, mandatory guide $15) at the summit, or 17-platform canopy at Mombacho Canopy Tour. 4x4 truck mandatory (transport included). A perfect half-day.
30 min from Granada, the Apoyo Lagoon = a former volcanic crater 6 km across, transparent turquoise water, delicious swimming (28°C). Several day passes: Hostel Paradiso (young, lively, $15 day pass + lunch), Paradise Lodge (luxury, $35), Norome Resort (family-friendly). Kayak, paddle, swimming. An ideal relaxing break between Granada and Masaya. Endemic freshwater turtles.

Nicaragua has 78 protected areas covering 21% of its territory. Around Granada: Volcán Mombacho (cloud forest), Las Isletas (waterbirds), Laguna de Apoyo (endemic species). The country shares Central America's megadiversity, but remains rawer than its neighbors.

2 nights: city + Las Isletas + Mombacho OR Apoyo. 3 nights: add Masaya volcano + Pueblos Blancos. More = move on to Ometepe (3h via San Jorge) or León (2h30).

Las Isletas = an absolute must. 1h30 lancha, departing Puerto Asese (5 min by taxi). 4-6pm tour = sunset over Mombacho. Kayak or private boat possible. ~$25-40/pers.
Volcán Masaya 30 min away: the only volcano in Central America with lava visible from the crater rim. Night tour ($50/pers, 6:30-9pm) = absolutely unmissable. Also possible by day but the lava is less visible.
Córdoba (NIO) is the official currency, but USD accepted everywhere (shops, hotels, taxis). LAFISE or BAC ATMs. Credit cards accepted in tourist hotels and restaurants. Daily budget $50-80/pers.
Nicaragua's multi-award-winning rum. Versions to taste: 7 years (cocktails), 12 years (signature), 18 years (digestif). National cocktail: Macuá (rum + guava + lime). Buy duty-free at MGA or Mercado Granada.
